Hokkaido Scallops / Cucumber / Fennel / Kiwi Presenting different forms of scallops: part is made into crackers topped with fennel-based kiwi salad, and grilled scallops. The tartness of kiwi highlights the scallops' sweetness, while the aromas of cucumber and fennel add refreshing layers, introducing a cool prelude to the summer menu.
Abalone / Seaweed / Onion / Yuzu Using abalone from Gongliao, naturally farmed without medication, showcasing the abalone's natural sweetness. Fresh abalone is scored and fried, retaining its firm texture and chewiness, and served with a sauce made from seaweed and abalone liver, full of umami. Yuzu juice adds citrus acidity to highlight the abalone's sweetness, while slight bitterness from citrus peel balances the liver's flavor.
