ESSE
ESSE is drawn from within dessert and from the first letters of essence; in Latin, it means “to be”. At a single long counter with eight seats, four desserts and a cup of tea bring out the trace of flavour that remains after everything else is taken away. There are two sittings every Saturday and Sunday; each sitting begins together, on time, and lasts about 90 minutes.
